Aruden-tei is known for its firm, perfectly cooked noodles, achieved using a custom-made "rotating boiling kettle." The recipe, carefully preserved since its founding, has attracted notable figures from Italy and beyond.
One of Aruden-tei's signature dishes is the "Alitalia," a recipe directly taught by the crew of an Italian airline.
The menu features over 30 spaghetti dishes at all times, including specialties like the "Aglio Olio with Bacon," generously topped with thick-cut bacon that covers the noodles, and the authentic Italian-style "Carbonara," made with little to no heavy cream. Other highlights include the "Bucaniera," a hearty tomato sauce dish packed with clams, shrimp, and squid. We also recommend the "Green Pea Salad," a hidden gem loved by many for its addictive flavor.
